When you think of Chinese food you think of rice, and rice was the first grain that was farmed in China. There is archaeological evidence of rice farming along the Yang-tse River as early as about 5000 BC. People cooked rice by boiling it in water, the way they do today. Or they made it into wine. Rice wine has been popular in China. The plant, which needs both warmth and moisture to grow, measures 2-6 feet tall and has long, flat, pointy leaves and stalk-bearing flowers which produce the grain rice.Rice is consumed by nearly one-half the entire world population and many countries, like Asia, are completely dependent on rice as a staple food. Rice is one of the few foods in the world which is entirely non-allergenic and gluten-free.Today, rice is grown and harvested on every continent except Antarctica, where conditions make its growth impossible. The majority of all rice produced comes from India, China, Japan, Indonesia, Thailand, Burma, and Bangladesh. Asian farmers still account for 92-percent of the world's total rice production. More than 550 million tons of rice is produced annually around the globe. In the United States, farmers have been successfully harvesting rice for more than 300 years.There are thousands of strains of rice today, including those grown in the wild and those which are cultivated as a crop.

However, there is another school of thought based upon certain records that show roast duck has a much longer history dating back as far as the Northern and Southern Dynasties. Up until the Southern Song Dynasty, ducks were roasted in the area around Jinling, today's Nanjing. However, the later Yuan Dynasty rulers moved their capital city to Beijing from Jinling and took with them their cuisine thus making roast duck popular in the city that was eventually to make it its very own specialty.The ducks were originally roasted in a conventional convection oven until Qing Dynasty when roast ducks became a delicacy in the imperial menu and were highly regarded by emperors and other members of the ruling classes.Man duck is more famous than I thought.
The Chinese have been using chopsticks for five thousand years. People probably cooked their food in large pots, using twigs to remove it. Overtime, as population grew, people began chopping food into small pieces so it would cook more quickly. Small morsels of food could be eaten without knifes and so the twigs gradually turned into chopsticks.
Some people think that the great scholar Confusius, who lived from roughly 551 to 479 B.C., influenced the development of chopsticks. A vegetarian, Confucius believed knives would remind people of slaughterhouses and were too violent for use at the table.Some people say that using Chopsticks helps develop small motor skills, hand eye coordination.

Patriotic revolutionary, Chu Yuan Chang took on the disguise of a Taoist priest and entered occupied walled cities handing out Moon Cakes. These were the instructions to co-ordinate the uprising which successfully formed the basis of the Ming Dynasty.Thus the tradition of giving cakes with messages was born and became a popular way of expressing wishes of goodwill or good fortune on an important occasion.Work was very hard and pleasures were few in isolated camps, those hard workers had only biscuits with happy messages inside, to exchange at the Moon festival instead of traditional cakes with happy messages, thus the FORTUNE COOKIE was born. This became something of a cottage industry and as the Chinese settled in San Francisco after the railway and the Gold boom the custom continued. Today it is almost impossible to have a Chinese meal in America and Canada without finishing with a Fortune Cookie.
